Sago Cutlets(Sabudana Vada)

Hello All,

Today, I come up with a breakfast delicacy which is speciality of we Maharshtrians. I have been having it from childhood so I simply love it and its none other than Sabudana(Sago) Vada!It tastes best when served hot with chutney made of ground nut and coconut.It's easy and quick to make, something irresistable,nutritious and delicious to have.
Do try the recipe for morning or evening breakfast😋.



Ingredients for cutlet:-

3 cups-Sabudana
4 cups-Water
3-Boiled potatoes
3-Green chillies
1 cup-Fresh Coriander Leaves
2 cups-Roasted and Grinded Groundnuts
2 tspn-Lemon juice
1 tspn-Sugar
Oil to deep fry.
Salt as per taste.

Ingredients for Sauce:-

4 tspn- Roasted and grinded groundnuts
1 cup-Fresh coconut pieces.
2 tspn- Curd
1 tspn-Sugar
1 tspn-Mustard seeds
1 tspn-Cumin seeds
2 tspn-Finely chopped coriander
1-Green chilly
salt as per taste

Method for Yogurt Sauce:-
  • Take all the ingredients except mustard and cumin seeds in a mixer jar and grind it to a smooth paste by adding 2 to 3 tspns of water only.
  • Now for tadka,heat 1 tspn of oil in a small pan and add mustard and cumin seeds to it.Add this tadka to the smooth paste and mix it well.

Your chutney/Sauce is ready!

Method for cutlets:-
  • Soak the sabudana in 4 cups of water overnight and strain it in the morning so that no water content is remaining or else the wadas will not be well binded.
  • Roast groundnuts and let it cool for some time.Remove the cover of groundnuts and grind it in mixer to a coarse mixture.Do not add water at all while grinding.
  • Take a bowl large enough to hold all ingredients together.Add the sabudana,grinded groundnuts,Mashed potatoes,lemon juice,finely chopped green chillies,coriander leaves,sugar and salt.Mix all the ingredients well so that mixture appears as below:

  • Make round and flat cutlets using your hands as shown below:

  • Fry the cutlets in hot oil until golden brown and crispy.


Serve it hot with the Yogurt sauce!
